American Institute of Baking
AIB is your best single source for education and research in the science of baking, bakery management, ingredients, equipment, food sanitation, and occupational safety. The American Institute of Baking is a not-for-profit corporation, founded by the North American wholesale and retail baking industries in 1919 as a technology transfer center for bakers and food processors. AIB is headquartered in Manhattan, Kansas, home of Kansas State University and one of the major centers for wheat and related grain product research and development in the entire world. The Institute works closely with local grain science and trade organizations, and maintains links and working relationships with many other food production and equipment, food safety, trade development, and food legislation groups and university food science research programs both in the United States and abroad.

Twenty years ago Millie Green was looking for something to do outside of her regular stint at the family's nut-processing company www.thepeanutking.com . So she signed up for a cake-decorating class at Sears. Several years later she traded in shelling for icing, specializing in foreign design techniques. From her southern Indianapolis shop, Amazing Cakes of Indy, Millie shares the basics of Australia's rolled fondant method, which creates the silky icing mixture, rolled out like pie dough, cut to a precise pattern and carefully laid over the cake base to be soothed into a silky finish. Then it's adorned as needed with gum-paste flowers and other decorations.
