Pineapple Banana Muffins

(With Raisins, Coconut & Ginger)

These are ever so delicious. And a great combination! These muffins are SUPER moist and the bananas, pineapple, and raisins make this a special tropical breakfast treat! Also, instead of the vanilla, I used coconut extract once and that was wonderful too.

These muffins make the kitchen smell like a weekend morning. Sweet banana and juicy pineapple bake into a tender crumb, while raisins add little bursts of caramelized sweetness throughout.

They’re hearty enough for breakfast, light enough for an afternoon snack, and perfect with a cup of coffee or tea. Whether enjoyed fresh from the oven or tucked away for the next day, they always feel like a small, happy escape.

Pineapple Banana Muffin Recipe Ingredients:

  • 2 1/2 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 2 large ripe bananas, mashed
  • 2 eggs
  • 2/3 cup brown sugar, firmly packed
  • 1/2 cup butter, melted
  • 1 tablespoon vanilla
  • 1 cup pineapple, chopped (reserve 12 chunks for garnish)
  • 1 cup raisins
  • 3 tablespoons crystalized sugar
  • 1/2 cup flaked coconut (optional)

Directions:

1. Preheat oven to 375 F. Lightly grease muffin tin.
2. Combine flour, baking powder, salt, cinnamon and ginger.
3. Beat together bananas, raisins, eggs, brown sugar, butter, lemon juice and vanilla until blended.
4. Stir in dry ingredients until blended. Stir in pineapple until just combined (over mixing will dry out the muffins). Spoon into prepared muffin cups, dividing batter equally.
5. Top each muffin with a couple of pineapple chunks (and coconut flakes if desired) then sprinkle the crystalized sugar evenly over the muffins.
6. Bake for 25-30 minutes or until golden.

These muffins are best enjoyed slightly warm, when the fruit is still soft and fragrant and the tops have just the right hint of sweetness.

They work equally well as a relaxed weekend bake or a make-ahead breakfast that feels a little special without any extra effort.

Whether you stick with vanilla or experiment with coconut extract, this is one of those recipes that invites small personal touches and rewards you every time you return to it.
